Executive Chef
Andres Farias
A veteran of respected kitchens around the world, from Chicago to Miami to Caracas, Chef Farias brings a diverse perspective and years of experience to Cavalier. His menu is informed by his extensive training and his travels, moving effortlessly from French techniques to American classics to local ingredients and even incorporating some San Antonio Latin flair. Before joining the team, he worked as an executive chef for Omni and Starwood, among others, and proudly makes his return to InterContinental after first working with us more than a decade ago.
Chef Farias is a graduate of the International Chef program from the High Training Educational Institute in Caracas, Venezuela, and completed additional specialized training in French and Asian cuisines, as well as bakery and pastry. His diverse skill set, combined with boundless creativity and a keen business mind, make him among the country’s most sought-after chefs for world-class hospitality properties. He is also devoted to giving back, and regularly participates in events such as the Chicago-sponsored Chef’s Tasting Party, which raised funds for more than 100,000 meals for Meals on Wheels.
We are thrilled and proud to welcome Chef Farias back to InterContinental, and we look forward to sharing his global perspective and extraordinary cooking at Cavalier, as well as Deco Bar, High Praise, and Rosebelly.

Fernando Coppola
A hospitality veteran, Coppola is both an accomplished front-of-house leader and a talented chef, and he brings a wealth of experience and leadership skills to Cavalier. He has worked with internationally renowned groups ranging from Marriott to W to Starwood, in Chicago, Puerto Rico, and Doha, to name a few. His creative direction is evident across all of our menus, and helps guide our thoughtful food and beverage offerings.
General Manager
James Brown
A hospitality veteran with a knack for thoughtful, gracious service, James Brown leads our team at Cavalier with warmth and empathy. Most recently, he was a similarly effective leader at the Omni here in San Antonio, and previously, he was a food and beverage manager at The St. Anthony Hotel and the Hyatt Regency in Lexington, KY. His experience leading hospitality teams to exceptional service for more than 2 decades is clear in every moment that he creates, and our guests know that they can rely on him to craft unforgettable and unique experiences every time that they visit.
